Directions
- In a medium-sized mixing bowl, combine all ingredients: the old-fashioned oats, creamy peanut butter, honey, ground flax seed, mini chocolate chips, chia seeds, vanilla extract, and a pinch of salt.
- Stir everything together until a thick, uniform dough forms. If the mixture seems too dry, add a teaspoon more of peanut butter or honey. If it seems too wet, add a tablespoon more of oats.
- Cover the bowl and chill the mixture in the refrigerator for at least 30 minutes. This crucial step makes the dough less sticky and much easier to roll.
- Once chilled, remove the dough from the fridge. Using a small cookie scoop or a tablespoon, portion out the dough and roll it into 1-inch balls.
