Born from a “bare pantry” panic, these 3-ingredient apple cookies are my go-to rescue for busy mornings and snack attacks. They’re proof that the simplest ingredients can create the coziest treats.

Ingredients

  • 2 – cups – Rolled Oats – (use gluten-free if needed)

  • 2 – medium – Apples – (about 1 ½ cups, finely grated)

  • 1 – pinch – Cinnamon – (optional, but highly recommended)

Directions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Finely grate the apples, including the skin for extra fiber and nutrients.
  • In a medium bowl, combine the grated apple, rolled oats, and cinnamon (if using). Mix until a thick, cohesive dough forms.
  • Scoop about 1 ½ tablespoons of the mixture onto the prepared baking sheet. Use your fingers or the back of a spoon to gently flatten each mound into a cookie shape, as they won’t spread while baking.
  • Bake for 15-18 minutes, or until the edges are golden and firm to the touch.
  • Let the cookies cool on the baking sheet for 10 minutes before transferring them to a wire rack to cool completely. They will firm up as they cool.
