I created these Baked Overnight Oats for those mornings when I’m running out the door but still need a hearty, homemade breakfast. They’re the perfect cross between a creamy oatmeal and a firm, grab-and-go breakfast bar, and my family is officially obsessed.

Ingredients

  • 2 – cups – Rolled Oats (old-fashioned, not instant)

  • 1 – tsp – Baking Powder

  • 1.5 – tsp – Ground Cinnamon

  • 1/4 – tsp – Salt

  • 1 – large – Egg

  • 1.5 – cups – Milk (any kind)

  • 1/3 – cup – Maple Syrup (or honey)

  • 1 – tsp – Vanilla Extract

  • 1 – cup – Mixed Berries (fresh or frozen)

  • 1/4 – cup – Chocolate Chips (optional)

Directions

  • Preheat your oven to 375°F (190°C) and grease an 8×8 inch baking dish.
  • In a large bowl, mix the rolled oats, baking powder, cinnamon, and salt.
  • In a separate medium bowl, whisk the egg, then add the milk, maple syrup, and vanilla extract. Whisk until combined.
  • Pour the wet ingredients into the dry ingredients and stir until everything is just incorporated.
  • Gently fold in the mixed berries and chocolate chips (if using).
  • Pour the mixture into your prepared baking dish and spread it out evenly.
  • Bake for 35-40 minutes, or until the top is golden brown and the center is set.
