minutesI was so tired of my same-old scrambled eggs, but these Cloud Eggs changed everything. They’re fun to make with kids, perfect for a lazy weekend, and so impressively fluffy it’s hard to believe they only take minutes to whip up!
Ingredients
2 – large – eggs
1/8 – teaspoon – cream of tartar
1 – tablespoon – Parmesan cheese, grated
1 – pinch – salt
1 – pinch – black pepper, freshly ground
1 – pinch – chives, fresh, chopped (for garnish)
Directions
- Preheat your oven to 450°F (230°C). Line a baking sheet with parchment paper.
- Carefully separate the egg whites and yolks, placing the whites in a clean, medium-sized bowl and each yolk in its own small, separate bowl.
- Add the cream of tartar to the egg whites. Using a hand mixer (or a whisk and serious elbow grease), beat the whites on high speed until stiff, glossy peaks form.
- Gently fold the grated Parmesan, salt, and pepper into the whipped egg whites.
- Spoon the fluffy egg white mixture into two cloud-like mounds on the prepared baking sheet. Use the back of a spoon to create a small well in the center of each cloud.
- Bake for 3 minutes. Then, carefully slide one egg yolk into the well of each cloud.
- Return the baking sheet to the oven and bake for another 3 minutes, or until the yolks are just set to your liking and the clouds are lightly golden.
- Garnish with fresh chives and serve immediately.
