Ingredients
2 – cups – Rolled Oats – (use gluten-free if needed)
2 – medium – Apples – (about 1 ½ cups, finely grated)
1 – pinch – Cinnamon – (optional, but highly recommended)
Directions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Finely grate the apples, including the skin for extra fiber and nutrients.
- In a medium bowl, combine the grated apple, rolled oats, and cinnamon (if using). Mix until a thick, cohesive dough forms.
- Scoop about 1 ½ tablespoons of the mixture onto the prepared baking sheet. Use your fingers or the back of a spoon to gently flatten each mound into a cookie shape, as they won’t spread while baking.
- Bake for 15-18 minutes, or until the edges are golden and firm to the touch.
- Let the cookies cool on the baking sheet for 10 minutes before transferring them to a wire rack to cool completely. They will firm up as they cool.
Notes
- Get the Right Texture: After grating the apple, you can give it a light squeeze over the sink to remove a tiny bit of excess liquid. This helps prevent sogginess and creates a chewier cookie. Don’t over-squeeze, though—you need that moisture!
- Customize Your Cookie: This is a perfect base recipe! Feel free to stir in a handful of raisins, chopped walnuts, or a dash of vanilla extract after you’ve mixed the main ingredients.
- Storage is Key: These cookies are best stored in an airtight container in the fridge for up to 5 days. The moisture from the apples means they don’t keep as long at room temperature.
