Ingredients
1 cup – Unsalted Butter
1/2 cup – Brown Sugar – (packed)
1 tsp – Vanilla Extract
3 cups – Quick-Cook Oats
1 cup – Chocolate Chips – (semi-sweet or dark)
1/2 cup – Peanut Butter – (creamy or crunchy)
Directions
- Line an 8×8 inch baking pan with parchment paper, leaving some overhang for easy removal.
- In a medium saucepan over medium heat, melt the butter and brown sugar together, stirring constantly until the sugar is dissolved and the mixture is smooth.
- Remove the saucepan from the heat and immediately stir in the vanilla extract and quick-cook oats. Mix until all the oats are thoroughly coated.
- Press half of the oat mixture firmly and evenly into the bottom of the prepared pan.
- In a microwave-safe bowl, combine the chocolate chips and peanut butter. Heat in 30-second intervals, stirring each time, until melted and smooth.
- Pour the melted chocolate-peanut butter layer over the pressed oat base and spread it evenly.
- Sprinkle the remaining oat mixture over the chocolate layer and press down gently to adhere.
- Place the pan in the refrigerator for at least 2 hours, or until completely firm.
- Once set, use the parchment paper to lift the bars out of the pan. Slice into 16 squares and enjoy!
Notes
- Press Firmly: The key to bars that hold their shape is really pressing the oat layers down firmly into the pan. Use the bottom of a flat glass or measuring cup for an even pack.
Oat Alert: For the best texture, be sure to use quick-cook oats. Old-fashioned rolled oats won’t soften as much and will result in a crumbly bar.
Customize It: Feel free to stir in 1/4 cup of shredded coconut, chopped nuts, or even a sprinkle of sea salt on the chocolate layer before adding the final oat topping.
Storage: Keep these bars stored in an airtight container in the refrigerator for up to a week. They can also be frozen for up to 3 months!
