Ingredients

  • 1 – cup – old-fashioned rolled oats

  • 1/2 – cup – creamy peanut butter

  • 1/3 – cup – honey (or maple syrup for vegan)

  • 1/4 – cup – ground flax seed

  • 1/4 – cup – mini chocolate chips

  • 1 – tablespoon – chia seeds

  • 1 – teaspoon – vanilla extract

  • 1 – pinch – salt

Directions

  • In a medium-sized mixing bowl, combine all ingredients: the old-fashioned oats, creamy peanut butter, honey, ground flax seed, mini chocolate chips, chia seeds, vanilla extract, and a pinch of salt.
  • Stir everything together until a thick, uniform dough forms. If the mixture seems too dry, add a teaspoon more of peanut butter or honey. If it seems too wet, add a tablespoon more of oats.
  • Cover the bowl and chill the mixture in the refrigerator for at least 30 minutes. This crucial step makes the dough less sticky and much easier to roll.
  • Once chilled, remove the dough from the fridge. Using a small cookie scoop or a tablespoon, portion out the dough and roll it into 1-inch balls.
  • Store the energy bites in an airtight container in the refrigerator for up to 2 weeks, or in the freezer for up to 3 months.

  • Mix-In Magic: Feel free to get creative with your add-ins! Swap the chocolate chips for dried cranberries, chopped nuts, or even coconut flakes.

  • Sticky Situation: If the dough is sticking to your hands while rolling, lightly dampen your palms with water. This creates a non-stick barrier without adding anything to the recipe.

  • For a Nut-Free Version: Simply replace the peanut butter with sunflower seed butter. It works just as well and gives a similar delicious flavor.
